White Chocolate & Cranberry Cookies

December 24, 2010 by Michelle 3 Comments

Happy Christmas Eve! I am feeling a little better today. I went to bed at 8:45 last night and got up at 7:45, so sleep does a body good. I am still tired though and feeling run down, so I’m skipping my run today. Hopefully I will get a Christmas run in tomorrow morning!

Now for the cookies… The first time I made these cookies I had some doubters. Even my hubby. He’s not a HUGE cranberry person and to put it in a cookie is crazy talk. However, after I made them they quickly topped the list of his favorite cookies, ever. He even suggested that we put these cookies out for Santa tonight 🙂 I get a lot compliments on these babies and they are truly the easiest.cookies.ever…and they only take 8 minutes to cook.

INGREDIENTS:
1/2 cup butter, softened
1/2 cup packed brown sugar
1/2 cup white sugar
1 egg
1 tablespoon vanilla
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
3/4 cup white chocolate chips
1 cup dried cranberries

DIRECTIONS:
Preheat oven to 375 degrees F (or in my case 395 since my oven is crazy)
In a large bowl (or Mixer), cream together the butter, brown sugar, and white sugar until smooth. Beat in the egg and vanilla. Combine the flour and baking soda; stir into the sugar mixture. Mix in the white chocolate chips and cranberries. Drop by heaping spoonfuls onto prepared cookie sheets.

Bake for 8 to 10 minutes in the preheated oven. For best results, take them out while they are still doughy. Allow cookies to cool for 1 minute on the cookie sheets before transferring to wire racks to cool completely.

**One suggestion I have is to not double the recipe. For some reason it doesn’t work with these cookies. I usually just make more than one batch!**

Ingredients – and that’s not a ping pong ball, but an egg
Mixin’
Ready to scoop
Resist the urge to eat the cookie dough raw (oh, who am I kidding?)
Ready to bake!
10 minutes later…

Now enjoy!!

I’m such a sucker for white chocolate. I need these in my life and in my belly, asap.

I kid you not — they are SO GOOD. And this comes from someone who doesn’t normally like cookies/cakes. PLUS they are super easy to make. I hope you make them soon!
