Easiest Pulled Pork Ever

Tonight’s dinner is one of the hubby’s and the kids’ favorites — pulled pork. The BEST part about this is that I make it in the crockpot (= super easy) AND it involves just 3 ingredients:

  1. Pork Tenderloin (I usually get about a 1lb-1.5lbs)
  2. A 12oz bottle of Coca Cola (not diet) (sounds crazy, I know)
  3. BBQ Sauce

Now, if you make your own sauce, it’s a little more complicated (I do love homemade BBQ sauce) – but if you strapped for time (or if you have kids hanging on your legs while you cook, like me) a bottle of your favorite BBQ sauce is all you need.

Directions:

Add the bottle of Coke and the pork to the crockpot. If the pork is frozen, you can either defrost it or not (today I didn’t, in the past I have – I can’t tell a difference). Cook the pork in the Coke for your desired time. I vary between 6 and 10 hours depending on if I’ll be home or if I forget to put the food in before noon (I know, shocker – me forgetting something? that never happens). About a half hour before the pork is done, remove it from the crockpot. Shred the pork. Drain the Coke (not longer needed!). Put the pork BACK into the crockpot and add the BBQ sauce  - and mix it up. Cook for the remaining half hour and you’re done!

The Coke does 2 things – it makes the pork really moist and makes the pork really tender (and therefore easy to shred). Before I discovered the Coca Cola secret I would have to use a more fatty piece of pork because tenderloin gets really dry and impossible to shred.

Serve the pork with whatever you’d like — tonight we had Baked Beans, but in the past I’ve served it with cornbread casserole (I really should post that recipe, it’s one of my favs!) or even sweet potatoes. Yum!

      My son is SUPER picky in a really weird way (he loves fruits/veggies – dislikes almost everything else) — it’s so frustrating, especially since my daughter (almost 3 years younger) will eat him under the table. He LOVES this dish though (and he doesn’t like most meats). It’s definitely worth a shot!
