Another day done. Today was a busy one and I can’t believe it’s past 9pm. Where did the day go?
Lots of exciting stuff happened today…
- We registered B for Kindergarten *sniff*
- My chiropractor’s wife had their baby (She was due April 3rd)
- B went to his first soccer practice
- L was cute (as usual)
- VICTORY WAS MINE!!! (<—slightly overdramatic)
You might remember that I was defeated by homemade Almond Butter a month or so ago. It was a sad, sad, day. I hate failing in the kitchen.
Tonight, I overcame my doubts and RAGE over my burned/chewy “nut butter” (if you want to call it that) and successfully made Almond Butter. And while I know I’m biased, it’s pretty damn good!
Here’s what I did…
Bought a package of raw, blanched almonds (blanched because they were out of the regular raw ones for some reason).
Mix them together with a few Tablespoons of Maple Syrup
Bake in the oven @ 375 for 13 minutes (stirring every 4-5 minutes)
Remove from oven and cool for about 5-10 minutes
Throw them in the food processor with a little olive oil, cinnamon, and salt — and blend
And blend, and blend…add more olive if necessary (I had to add a little more)
Do a happy dance (preferably, the Dance of Joy) and force your hubby to try it (try some yourself too) and then store it.
Next time I will use an actual jar – but this will do for now.
Now I want to make all kinds of nut butters (that I can eat — peanuts, walnuts, and macadamia nuts are out. That leaves me with cashews??).
