Marathon Monday + Weekly Menu

How crazy was the Boston Marathon today?? I couldn’t watch at work, but I was following updates and wow! Who knew running could be such a nail biter! Reading about it has fully amped up my running bug. I really have no plans to BQ (Boston Qualify), but a little part of me would LOVE to run that race.

Fun Fact: Mutai (and really about 19 of the top finishers) finished a FULL marathon in about the time it takes me to run a HALF marathon. Damn they’re speedy. (4:25 pace!!!)

The rest of the work day was dull in comparison — so much so that I drank a Diet Rock Star @ 3:30. Ummm that was dumb. Thanks for enabling me Carol :) I hope I get to sleep before 2:30am tonight!

Because of yesterday’s shopping spree, the weekly grocery trip was postponed until tonight. I DID get everything though AND spent less than usual. Boo-yah!!

This is what’s on the table this week (and by table, I mean what we are eating in front of the TV):

  • Mac ‘n Cheese – B’s request. Does it help that it’s organic? Hmmm probably not.
  • Mandarin Orange/Cranberry Chicken Salad
  • Fish Tacos
  • Poppyseed Chicken (<—and old college favorite!! I still make it Martha!)
  • Beef Stew
  • Tortellini Soup

I’m feeling like I’m in a bit of a rut with my menu…I need to do some branching out next week for sure. Send me your recipes!!

Did you watch/follow the Boston Marathon today? Do you want to run it? or even just watch it ?? I would love to hang out in the crowd!!

It’s so good! Pretty kid friendly, too, I think-I usually buy a bag of Alexis sweet potato fries and some steamed veggies.

    I always loved that chicken and spinach casserole you serve.. that’s yummy!! Also, frozen baby peas and frozen whole corn mixed with butter and salt ??? That was a hit for a long while.. then I over did it!! Love the meatloaf idea..especially if its in muffin pans.. personal size servings.. cool idea.. Enjoy!
