Rotini with Chicken Sausage, Peppers, & Onions

What a day!

I’m pretty sure this was the longest day of my week, possibly of the month. I swear it just kept going and going. Like the Energizer Bunny, but not in a good way. I DID get up at 5:15 and I ran 4 miles at a 9:40/mile pace. I started out REALLLLLLY slow– so that pace is deceiving. The first two miles were REDONKCULUS slow, and the 2nd two were really fast (for me — under 9:00). They kicked my booty.

Work was both busy and dragged on. It that possible? Because that’s what happened. After work I had my chiro appt and my mom came down to spend the night. It’s always fun when she’s here, but it’s always 18000 times more chaotic than usual and LOUD. I couldn’t hear my own thoughts loud.

Thankfully, I had an easy dinner planned — one that pleases the masses.

Rotini with Chicken Sausage, Peppers, & Onions

Ingredients:

  • 16oz Pasta
  • 2 Red Peppers
  • 2 Green Peppers
  • 2-3 Onions
  • 2 packages of your favorite chicken sausage (or regular sausage)
  • 1/2- 1 cup of Balsamic Vinaigrette Dressing
  • 2 Tablespoons of Djion Mustard
  • Salt/pepper to taste

I LOVE this dressing, but it was HFCS in it. BOOOO. I typically use Newman's Own.

Hey Paula -- this mustard is expired too. I still used it. Shhh.

Directions:
Cook pasta. Saute peppers and onions. Once caramelized, add the sausage and cook until heated thoroughly. Once cooked add onions, peppers, and sausage to pasta. Toss with dressing and mustard and season to taste. Serves A LOT of people. Be prepared for leftovers!

    I have run across a few of these recipes over the last few days, but this one looks great! For the chicken sausage I am a fan of Original Brat Hans from Whole Foods. It’s all natural with no preservatives or addes hormones, which is nice. Cook on!

    My favorite meal is hard. TWSS. I really love Thai Curry Chicken and gyros. Not together. But not sure if they are #1, or just close.

    Nice job on the expired mustard. I always say, eating expired food will only help us win the Human/Bacteria War of 2024.

      I am on board with both of those meals. Why has gyros never been a pre-race meal?
