What a sad day. I only cried about 18 times.
I am SO grateful for the job I’ve had for the past 2 and a half years and the people I’ve worked with. I know, it’s just a job, but sometimes when you spend THAT much time with people, they become like family. I wish them all the best!
When I got home, I looked like a sad gypsy.
Please remind me that this is not a good look for me!
Thankfully, the hubby was willing and able to entertain the kids
while I drank a beer and cooked dinner.
L was channeling my feelings tonight too. It’s hard to be two.
Dinner tonight was a new recipe and really good! It was relatively easy to prep and took about 30 minutes to cook.
Balsamic Bruschetta Chicken
I got this recipe from Food Buzz — and this blog. I tweaked it a little bit — and I think next time I make it (and I WILL make it again!) I will pan sear instead of bake the chicken (only because it’s much quicker).
Ingredients:
- 1.5 lbs of chicken breasts/tenderloin (I ALWAYS use tenderloin)
- 6 Roma Tomatoes
- 1/2 cup of Balsamic Vinegar
- 1/2 cup of Olive Oil
- 1/2 tsp of sugar
- A big ball of fresh mozzarella sliced
- 8 leaves of basil (stacked, rolled & thinly sliced into chiffonade)
- Salt – to taste
Directions:
Preheat oven to 425.
Marinade the chicken in 1/4 cup of vinegar and 1/4 oil for about 15 minutes (you’ll use the remaining oil/vinegar on the tomatoes). Pour chicken and marinade into the baking dish. Cook at 425 for about 25 minutes. Place sliced cheese on top and cook for an additional 4 minutes (or until melted).
Chop the tomatoes and basil and combine them in a boil. Marinade in the remaining oil/vinegar and add sugar. Pop the mixture into the fridge while the chicken cooks.
Once the chicken it done, serve with tomatoes on top. Serious yum!
I served this with a side of broccoli. B doesn’t LOVE tomatoes (in fact he hates them) so it was nice that I didn’t have to pick the tomatoes out to get him to eat dinner (you gotta pick your battles!). He eats broccoli like it’s going out of style so I don’t ever have to worry about him eating his veggies!
Sooooo… What are you doing this weekend? Is there a veggie you HATE? (I hate peas)

I HATE lima beans. But are they really a veggie?
I like them in soup… but rarely eat them otherwise. I actually like peas in soup too, so maybe that’s saying much

Peas are probably my least favorite but I can’t stand them if I have to.
How was that beer? I love the label. I need one of those right now!
Yeah, I can tolerate the peas too. In fact I put them in my dinner tonight. They just don’t do anything for me (and made me gag as a kid).
The beer was OK. I prefer the regular Magic Hat #9 — but I’ll try a Summer brew any time! Hope you got one
