Summer Salad

Oh man. What a day. I am exhausted – and not just because of my early wake up call. I actually got in a 1.5 hour nap. I can’t say the same for my kids though.

They look so sweet an innocent, but looks are seriously deceiving…

This little lady was EVIL today!

No nap = a complete meltdown at Publix for L. You know that kid you hear screaming at the grocery store and you wish they would shut the hell up (yeah, don’t worry I feel that way too, it’s OK to admit it)? Today, that was my kid. Now, this isn’t the first time that it’s happened to me – it’s just the first time with L. Ahhh milestones.

Eventually a saint  an employee came over and gave L a pad of paper and a pencil. The screaming stopped and so did the dirty looks. I wanted to kiss her (the employee).

When I got home the cleaning kick continued (I really don’t know what’s gotten into me) and I cleaned the kitchen and the floors (and then after dinner I vacuumed). It feels so good to have a (relatively) clean house!

For dinner tonight I made a family favorite — Summer Salad! I’m SO glad this salad is back in my rotation. It’s easy, it’s healthy, and I get both a healthy serving of fruit AND veggies. It’s certainly not original – but here’s how I make it…

Summer Salad

Ingredients:

  • 2 bags of Lettuce
  • 2 cucumbers
  • 1 red pepper
  • 1 cup of strawberries (diced)
  • 1 cup of blueberries
  • 2 mangos (chopped — and thanks to Christine, I finally know how to chop it properly!)
  • 3 cans of mandarin oranges
  • 2 cans of pineapple tidbits
  • 1 avocado (chopped and on the side)
  • 1 bag of southern fried chicken – precooked (I know, not super healthy – but in moderation it’s not too bad!)

Directions:

Chop the fruit/veggies, microwave the chicken, and throw everything together in a bowl. Serve with your favorite dressing (tonight I tried Marzetti Simply Dress Balsamic – it was really good!)

It makes a HUGE salad — perfect for leftovers!

      It was definitely hard getting up – but worth it! I just need to force myself to go to bed @ 9:30. I’m such a party animal!!

  2. Mmmm! That looks so good! And sometimes fried chicken tenders is totally necessary. Plus on a salad the veggies cancel it out, right? ;) hehe

    Sorry about the meltdown. I can relate. M has been a little terror recently.

      Yes on the chicken tenders — that’s exactly my philosophy! I used to buy the Eat Well Stay Healthy Kids chicken nuggets (and popcorn chicken) from Pilgrim’s Pride but my grocery store stopped selling them! I’m still on the lookout for a healthier option, but those things were great.

      Sorry to hear about M! This age is so frustrating sometimes – but then there are the super cute moments that balance it out. Thank goodness for those!

      I’ve done it with the faux chicken nuggest before and it’s just as good! Really it’s the breading that gives the salad the extra kick of flavor (I could actually do without the chicken!).
