Whew, what a day!
It started at 3:15 (as planned). For once, I actually got to our meeting spot on time at 4:30 (miracles do indeed happen). In fact, I was NOT the last one there. Yay! We knocked out 14 miles at a 10:09 pace (we probably ran a little faster than that – but 2 people from my group fell so we ended up stopping to walk a few times. Thankfully it was not me!). The run was tough, but I was not hydrated enough and it was crazy humid (95%). It actually got easier at the end because the humidity eased up.
I came home to an empty house (hubby/kids were at the gym) and I was able to clean, organize, and catch up on my blogs! So jealous of everyone who was at HLS this weekend.
Around 11:30 we headed over to Publix for lunch. IT.WAS.SLAMMED. We grabbed subs, apples, and chips and then headed over to the splash park for some water-filled fun! We met our friends Jackie & Gary – and their kids.
When we got home we ALL passed out. The kids and the hubby took 3 hour naps, and I (the one was up the earliest mind you) got in about an hour and a half. I really didn’t want to get up – but it was 5pm at that point and I hadn’t finished my shopping list. Doh!!
After a second trip to Publix (PS – They were still slammed) and a gazillion dollars later I rushed home to make this:
Oh. My. Goodness.
This is Mama Pea’s Tater Tot Casserole and it’s seriously the perfect post 14-mile meal.
Are you sick of me gushing over Mama Pea yet?? Hopefully not because I am trying out a few more recipes from her book this week and would love to share. Can’t wait!!
The kids are fast asleep, their 1st day of school clothes are laid out, and I’m about to make my first ever “school lunch.” Wish me luck!!
I know I keep saying it – but I can’t believe I have a KINDERGARTENER!!
How did you spend your Sunday? What’s your favorite Sunday meal?
