I’m so happy Monday is over – aren’t you?
Today went by really fast though — and I had the most amazing lunch. (some kind of tofu, with veggies, and noodles. Ah-mazing)
Miss Saigon – I love you! Shhhh… don’t tell Hummus House!
After work, B had to do his first homework sheet of the year. Yes, there’s homework in Kindergarten now.
L wanted to do her homework too. So she colored.
And I made one of the easiest salads ever – that is a family favorite. Bruschetta Salad.
B had FOUR servings.
- 1-2 bags of chopped Lettuce
- 1-2 Tomatoes (chopped)
- 1-2 Cucumbers (chopped)
- Chicken nuggets/grilled chicken (optional!)
- Sun-dried Tomatoes (1/2 cup?)
- 1 can Artichoke hearts (best roasted – see below!)
- Goat cheese crumbles (1/4 cup?)
- Balsamic Vinaigrette
Combine ingredients and serve — making mouths happy! Mine included.
I did forgot one item tonight – even though I have it in the fridge. Goat Cheese! Wah.
I tried something different tonight and roasted the artichoke hearts.
Directions: open can, sprinkle with olive oil and salt, and broil for about 10 minutes. Yum.
I really think everything tasted better roasted. Agreed?
I DO owe credit for this recipe to Designer Greens. They have Bruschetta Salad (and I believe a Bruschetta panini). Although this recipe is nothing like REAL bruschetta – it’s the perfect Monday night salad.
