Thanks for all of the Tweets, comments, and emails about my 20-miler today! I’m still kinda shocked that I actually ran 20 miles. If you had asked my 18-year old self if that I was possible I would have NO WAY. Never say never!!
After eating a half a bag of chips for lunch (so healthy, I know) and a 2-hour nap (so needed) – I feel like a new person. I did wear my compression socks to Publix.
but for the most part my legs feel good. Ice baths are AWESOME for this reason! I should have iced last weekend – my legs hurt more – after a 14-mile run!
At Publix I picked up my weekly menu items. I will be out of town from Wednesday-Friday so there are some simple meals in there for the hubby. Here’s what we (or at least my family) is eating:
- Beef Stew
- Curry Chicken
- Shrimp Pad Thai
- Fruit Salad with Chicken
- Grilled Cheese
As for tonight – I’m currently cooking Beef Stew. It’s a total comfort meal for me (I grew up eating Dinty Moore, probably once a week — anyone else?) and the perfect meal when ran 20 miles and ate chips for lunch (seriously, I am the epitome of health!).
I know there are a gazillion HEALTHY beef stew recipes. But me? I prefer the easy way out.
Yes, sometimes I cheat. While I try to eat whole, unprocessed foods MOST of the time, I like my beef stew mix full of ingredients I can’t pronounce. It’s quick. It’s easy. It’s tasty. And it IS chock full of veggies.
Everything in moderation, right?
