It is no secret that I love pasta and that I love shrimp. When I go on a long run or I’m having a hungry day I seek out a shrimp & pasta dish. It’s MY comfort food. This was DEFINITELY the case on Sunday when I made this recipe for dinner.
I went to Publix on Saturday this week (which was actually kind of nice!) and bought some nice asparagus and shrimp (both on sale!), and I always have pasta in my pantry — I just didn’t know what to do with it! I just know that after my long run on Sunday I was hungry and I wanted carbs. And shrimp.

It was fast, involved very little prep, and the whole family ate it without complaint. Definitely a winner and something we will be repeating!
Lemon Shrimp & Asparagus Pasta
Serves 6-8
Ingredients :
- 1 onion – chopped
- 1 tablespoon of garlic – minced
- 2 tablespoons of olive oil
- 1.5 lbs of asparagus – chopped
- 2 lbs of shrimp – peeled and deveined
- 1/4 cup of white wine
- 1/4 lemon juice
- 1 tablespoon of butter
- 1/2 parmesan cheese
- 1/2- 1 tablespoon of Badia Complete Seasoning
- salt/pepper to taste
- 12oz of pasta of your choice (cooked)

Directions:
Cook pasta while prepping protein and veggies. Sautee onions in olive oil until they are soft and caramelized. Add garlic and asparagus and cook until asparagus is bright green (about 3-4 minutes). Add shrimp, wine, and lemon juice. Cook until shrimp is pink. Add butter and parmesan cheese and toss with pasta.

Honestly, this recipe is nothing new – but it’s easy and sometimes you forget your can pair lemon and pasta. Or at least I do!
Try it the next time you’re in a pinch. It’s JUST as fast as take out – and costs less!

Just come over for dinner! I had the leftovers the next day and they were just as good. Oh – and I forgot one ingredient (updating now — Badia Complete Seasoning – I used about a tablespoon).
Looks great..funny we had the same thing on Tuesday night..without the Badia Seasoning! Still..a yummy dinner and plenty of left overs! Love the smiles!
Looks delicious! I love “lighter” pasta dishes that just taste fresh and incorporate fresh ingredients. I bet this is even better the next day! I love that about pasta dishes.

I need to get myself eating more pasta. I’m crazy about pasta dishes with shrimp, but I would have to sub in something for the asparagus since I can’t handle the um, effect, it has on my body . . . (and yes, I did just talk about asparagus pee on your blog).
