Weekly Menu & Workouts

I survived Monday — although this was definitely me this morning:

Why are Mondays so hard?

Unlike last week, I made my shopping list when I was “feeling healthy”, which really makes such a difference in what we eat that week. Unfortunately, I went to the store a little a lot hungry (I might have bought a lot unnecessary snacks). You win some, you lose some :) This is what we are eating…

  • Red Curry w/Noodles and Mixed Veggies (need to work on this recipe & post it)

  • Summer Salad (with BLUEBERRIES!! So happy they are back in season)
  • Spinach Enchiladas (leftover from last week)
  • Aztec Salad (we liked it so much, I’m making it again!)
  • Chicken, Veggies & Rice (a staple)
  • Chicken Sausage & Grilled Pepper Hoagies

As for the workouts. Well, I struggled again last week. I skipped a run and only ran 3 miles the day I was supposed to run 8! I did squeeze in an extra upper body workout though – and it felt good! This week will probably be similar:

  • Monday – Off
  • Tuesday – 5 miles
  • Wednesday – Spin + 2 miles
  • Thursday – 3 miles + upper body
  • Friday – Spin
  • Saturday – 6 miles
  • Sunday – Spin + 2 miles

BORING…but it gets me through the week. Especially because I bought a new bikini this weekend and I’d like to look good in it!

What’s your go to snack when you are hungry?? Mine: Salt & Vinegar Chips. YUM.

  3. Mmmm love me some Salt and Vinegar chips! Chris doesn’t like them though (not even the smell), so I don’t buy them that often…probably just as well haha! Did you post the Aztec Salad recipe recently? It sounds really good, I’m always looking for new dinner/meal-sized salads. :) Did you run this morning? I didn’t see you… but I was out extra early and back by like 0545. I swear I’m not a complete stalker neighbor friend lol.

    • Dan is the same way the chips – although I have recently gotten him to taste them and he agrees they taste better than they smell. He still can’t stand them though.

      I use couscous instead of quinoa – I’m just not a big quinoa fan.

      I DIDN’T run this morning, but I should have. Now I have to run tonight. I am also SO impressed that you get up so early. I wish I could do that, especially this summer. I’d say we should run together, but I feel like you are 10 times faster than me! If you are ever up for a slower run – let me know :)

        I don’t get up that early every day, only Tuesdays hehe…I think that’s what makes it manageable, knowing that it’s only one day a week. I run other days, just not at the butt crack of dawn. I would love to run together, I am not fast at all! You are definitely faster than me. I am happy to be running 9:30-10:00mm, especially that early in the morning. So if *you* are ever up for a slower run, let me know :)

        • That is actually the perfect speed. Ha ha. I only run faster when I just want to get the run over with and I’m jamming to some music. Running with others is a whole different story! Let me know when/what time you run. I don’t mind waking up super early if I have a reason. This is why is SO much easier for me to wake up on Spin days. I know I need to get to the gym to get a bike!
