Whew. What a Monday. It started off slow. My brain just did not want to think. It did not want to be at work. It was grumpy. It did not want to be nice to people. This was me…

(Yes, this is L – sassy already at one day old)
But I survived. I pulled my head out of the clouds and by the end of the day I {begrudgingly} got myself back into the game. New week here we come!
Thankfully, I went food shopping yesterday (two weeks in a row – woo-hoo!) so I didn’t have to struggle to piece together a meal tonight. This is what we are eating:
- Publix Subs (at the request of B) (I had Roast Beef)
- Asian Coleslaw Salad with Chicken (using Broccoli Slaw)
- Spinach Stuffed Shells w/Marinara
- Fish Tacos
- Roasted Veggie Salad
- Mozzarella, Avocado & Tomato Paninis
- Turkey Sandwiches with Cucumbers/Hummus
As for workouts…. Well, I had good intentions to continue straight into Bootcamp Week #2 — but then I got swamped at work and realized I hadn’t had a rest day in a week. I love workout out – but I know I need a rest, so I start tomorrow! Here’s my week:
- Monday: OFF
- Tuesday: 20 minute HIIT Workout + Workout A
- Wednesday: Spin + Workout B
- Thursday: Bootcamp Class (Total Body)
- Friday: 5-6 mile Run
- Saturday: Spin + Run + Workout C
- Sunday: Spin + Run
It’s an intense week — but I’m ready for it!

That’s exactly why I meal plan – if not, I’ll go to Publix every day and spend $$$$ on food I don’t need!! Posting about it helps too – makes me accountable.
